Hoĝ ( Qgam Dzwo hoĝ /xɔŋ/), also known as dzoĝ ( Qgam Dzwo dzoĝ /d͡zɔŋ/), is a milk-based, carbonated alcoholic drink popular in Qgam. Depending on the region, it may be made either from cow's milk or mare's milk. The drink has been an important part of Qgam culture for millennia.

Background

The production of hoĝ is believed to be imported by the Qgams when they originally spread into northern Soltenna; there is no evidence of its production prior to their arrival. Sparse evidence of its production in the Darkine mountains, so it is thought to have been developed by the Qgams, though its ultimate origins remain unknown.

Production

Standard hoĝ is generally made with filtered mare's milk. Traditionally, yoghurt is added as a starter culture for fermentation. Traditionally it was placed in sealed bags and frequently shaken, often tied to horse saddles, or placed in containers and often stirred. It is allowed to ferment in this way for one or two days. Once completed, hoĝ as a low alcohol content, approximately 2-3% ABV. As hoĝ cannot be stored for long periods, it is generally consumed after attaining the desired flavour. Variants involving cow's milk require fortification with whey or other products to increase the sugars required for the fermentation process.

Traditional hoĝ can only be prepared and consumed during the season when foals are born; during this season, hoĝ is produced and consumed in great quantities. Winter hoĝ, typically called dzoĝ, is made with cow's milk. This version can be produced year-round and stores somewhat better.

Consistency

Hoĝ is a sour, carbonated, lightly alcoholic drink with a creamy texture and strong flavour.

Cultural Importance

Hoĝ has been a part of Qgam culture as far back as history can record. It is believed to be an auspicious drink that holds great healing properties. Hoĝ, and, outside of the hoĝ season, dzoĝ, are frequently consumed at the beginning of important events.
