Ỳtamok (Amaian [ɨ̀tɑmʌk]), singular ỳtam (Amaian [ɨ̀tɑw]), are a type of meat-filled dumpling found in eastern Vaniua, especially Amaia. Other surrounding countries have their own versions with different names, but Amaia is usually considered to be the origin of the dish.
Amaian varieties usually consist of a wheat-and-egg-based dough filled with ground red meat, onions, and often potatoes. Once sealed, they are either pan-fried or steamed, and are usually served with steamed cabbage. They may be dipped in sour cream, or alternatively soy sauce and vinegar.
